There's a reason that this dish is my favorite family meal, and super satisfying on many levels. From a nutritional perspective, well-sourced chicken can be a highly nutritional source of high-quality, low-fat protein. When serving chickens that have been pasture raised, you're also getting the rich omega fatty acids that these animals have consumed while grazing. Using olive oil for roasting incorporates good quality fats shown to be beneficial in Mediterranean style diets. Tossing the dark leafy greens in the chicken's juices before serving, along with chunks of fresh bread, allows you to sop up every bite of the deliciousness.
